Bulgarian salads and soups

Bulgarian salads and soupsShopska Salad

3-4 tomatoes
1 cucumber
4-5 peppers
1 onion
300 gr. feta cheese
parsley
vinegar
sunflower oil
salt
Bake, peel and seed the peppers. Cut into small strips and add the diced tomatoes, cucumbers and onion. Add salt, oil and vinegar and mix. Serve in the shape of a pyramid, top with chopped parsley and lots of grated feta cheese.

Spinach Soup

400 gr. spinach

60 g butter
2 tbsp plain flour
500 ml milk
pepper
salt

Boil the chopped spinach in salted water for about 15-20 minutes, drain,
leave to cool for 10-15 minutes, then smash and make into puree. Melt the butter in a pan,
add the flour, stir well, fry for 2 minutes, then add the spinach. Add the milk and 200 ml of the water
in which the spinach was cooked. Simmer for 5-10 minutes and season with pepper.

Tarator (cold yogurt soup)

1 cucumber
500 gr yogurt
4-5 cloves of garlic, chopped well
wallnuts, chopeed well
2-3 tbsp olive oil
dill
salt
pepper

Chop the cucumber in very small pieces, mix the yogurt with some cold water so that it becomes in soup like condition /thickness may vary according to your preferences/and mix with the cucmbers. Add some olive oil, the garlic, the wallnuts, some dill (finely chopped) and salt and pepper to your taste. A perfect light meal for the hot summer days! Enjoy!
