Bulgarian cuisine is a strange but enchanting mixture between European, Oriental and Mediterranean cuisines and you will be amazed by the spectrum of lovely-tasting dishes offered here.
I will definitely start my list with my favourite shopska salad - a purely Bulgarian thing, similar to the Greek salad, but still different and proudly bearing the name SHOPSKA after the name of the inhabitants of the Sofia region (shopi). Shopska salad is the obligatory appetizer that every average Bulgarian drinks with his rakia (grape brandy). The ingredients include tomatoes, cucumbers, grated cow cheese, green pepper, onions and parsley.
Next in my salad list comes the SNEZHANKA salad - a thick creamy yogurt salad with cucumbers and a lot of garlic. Again, a combination close to the Greek tzatziki, must have been brought here by our Greek neighbours.
KYOPOOLU is another popualr summer salad that has been brought here by our Turkish neighbours, a delicious mixture of aubergines, baked peppers, tomatoes and garlic.
Bulgarians do like to add sppices to the salads and to all meals in general. Most popular spices are Tchubritza, Oregano, Basil, Djodjen (if someone can help me with the English name of that, I will be grateful).
Bread has always been present on the Bulgarian table. Bulgarians eat bread with everything - with their salads, with their main meal, sometimes just with cheese or kashkaval. There is a traditional Bulgarian saying: "No one is taller than the bread", implying that nobody has greater power than the bread, which shows the importance of the bread for the Bulgarians. Bulgarians like to meet their guests with bread and salt, it is a sign of friendliness and hospitality.
